Mr. Cute y yo tenemos una forma de viajar un tanto especial. Si queréis torturarnos, podéis meternos de los pelos en el típico viaje programado con guía, visitas organizadas y demás. Nosotros disfrutamos de un viaje cuando conseguimos colarnos en la vida cotidiana de una ciudad y siempre solemos llevar trazada una ruta de cafés, bares. Y, por cierto, solemos recordar más con el paladar que con la vista.

Todo este rollo es para contaros que uno de los mejores recuerdos que guardamos de nuestro viaje a Viena hace ya unos añitos fue el pedazo de tarta Sacher que nos tomamos sentados sobre las butacas de terciopelo rojo del mítico Hotel Sacher. Desde entonces, he querido dar con una receta que se aproxime lo más posible a la original y lo he conseguido. En lugar de hacer una tarta, vamos a hacer un bundt pero los ingredientes y el proceso son exactamente los mismos.

El reto de este mes de los #BundtBakers era hacer un bundt con chocolate. Ése fue el ingrediente que nos propuso Dessert Stalking. Y no se me ocurre una receta que incluya chocolate mejor que la tarta Sacher.


Mr. Cute and I have our own way to travel. The typical trip with scheduled tours is a torture fo us. We enjoy it the most when we get sneak into the daily life of a city and always mapped out a route of cafes, pubs.... By the way , we remember the taste of a trip more tan the view.

This all to tell you that one of the best memories we keep of our trip to Vienna, a few years ago, was the piece of Sacher torte that we had sitting on the red velvet seats of the legendary Hotel Sacher. I'm looking for a recipe as close as possible to the original since then.  And I achieved! Instead of making a cake, we are going to bake a bundt but the ingredients and process are exactly the same.

The challenge of this month for #BundtBakers was to make a chocolate bundt . That was the ingredient proposed by Dessert Stalking . And I can´t imagine a better recipe that includes chocolate than the Sacher torte.

INGREDIENTES

100 gr. de chocolate negro (70% de cacao) | 100 gr. de almendra molida | 100 gr. de azúcar glass | 100 gr. de harina de repostería | 125 gr. de azúcar blanca | 20 gr. de agua | 70 gr. de mantequilla | 6 huevos | 1 teaspoon de Royal

Para la cobertura

100 gr. de chocolate negro | 100 gr. de nata | Mermelada de albaricoque

El primer paso es mezclar en un bol la almendra molida, el azúcar glass y el agua. Conseguiremos una masa muy densa que dejaremos reservada. Por otro lado, en un cazo, derretimos el chocolate y dejamos que se temple..

En otro bol empezamos a batir la mantequilla a temperatura ambiente con el azúcar granulado. Cuando blanquee, añadimos las yemas de los 6 huevos, de una en una. A continuación, echamos la levadura, la mezcla que hemos hecho al principio con la almendra, y la harina.

Una vez que hayáis echado la harina no sigáis batiendo. Mezclad con una espátula para que quede bien esponjoso. Cuando la harina esté bien integrada, añadimos el chocolate derretido. Es importante que no esté caliente para que no derrita la mantequilla. Mezclamos suavemente con la espátula.

Por último, añadiremos las claras de los 6 huevos montadas a punto de nieve. Mezclamos con suaves movimientos envolventes y volcamos la masa en un molde engrasado.

Lo meteremos en el horno a 170 grados durante 40 minutos. Cuando haya pasado ese tiempo, sacaremos el bizcocho del horno y lo dejaremos reposar dentro del molde durante 10 minutos. Pasado ese tiempo, lo podremos desmoldar fácilmente. Esos 10 minutos son el truco infalible para desmoldar sin problemas un bundt cake.

Este bizcocho de chocolate es delicioso así mismo, pero vamos a mejorarlo aún más con los ingredientes característicos de la tarta Sacher: la mermelada de albaricoque y una cobertura de ganaché de chocolate. La tarta original, lleva la mermelada en el centro. Yo os propongo untar la superficie del budt con mermelada.

Después lo cubriremos a nuestro gusto con el ganaché (podéis ver aquí cómo hacerlo, pero resumiendo, hay que poner la nata en el fuego hasta que hierva, añadir el chocolate troceado y remover hasta tener una mezcla homogénea).

Os aseguro que el resultado es espectacular. Un bocado muy jugoso y ligero que además es conserva varios días sin resecarse.

INGREDIENTS

2/3 cup of dark chocolate | 1/2 cup of ground almonds | 7/8 cup of icing sugar | 1 cup of pastry flour | 1/2 cup of granulated sugar | 1/4 cup of water | 1/3 cup of butter | 6 eggs | 1 teaspoon of baking powder

Topping: 2/3 cup of dark chocolate | 1/2 cup of cream | Apricot jam

The first step is to mix in a bowl the ground almonds, icing sugar and water. Get a dense mass and reserve . Meanwhile, in a saucepan , melt the chocolate and let it temper.

In another bowl beat butter at room temperature with granulated sugar. When bleach , add the yolks of 6 eggs, one at a time. Then take the baking powder, the mix we made before with almonds and the flour.

Once you have thrown the flour, stop beating . Mix with a spatula to make it very fluffy. When the flour is well integrated, add the melted chocolate. Mix gently with a spatula.

Sacher Bundt Cake

Finally, add the whites of 6 eggs stiff mounted. Mix with gentle stirring motion and pour batter into greased pan.

Put it in the oven at 170 degrees for 40 minutes. After that time, get the cake from the oven and let stand in the pan for 10 minutes. Then, we can easily unmold. Those 10 minutes are the infallible trick to unmold a bundt cake trouble free .

This chocolate cake is delicious withaout anything else, but we will improve it even further with the characteristic ingredients of the Sachertorte: apricot jam and chocolate ganache coverage. In the original cake, jam leads at the center. I propose spread the budt surface with jam.

Cover it to your liking with the ganache (in short words: put the cream on the fire until it boils, add chopped chocolate and stir until you get a smooth mixture).

I assure you that the result is spectacular. A very juicy and light bundt that keep several days without drying.

  19. I love how the ganache flows down this Bundt. I want a spoon of that ganache with some cake, of course. Ditching the guides is definitely the best way to travel.
